Rebel Rise GF Bistro & Bakery, founded by Beth Gregory, is a dedicated gluten-free scratch bakery and bistro located in Rockbrook Village, Omaha. Rebel Rise reimagines comfort food with clean, high-quality ingredients and nostalgic flavors — proving that gluten-free can be both indulgent and inclusive.
What began as a home-based passion project has grown into a full-scale bistro featuring café seating, a drive-through, and a cozy “boho-Tulum meets home” atmosphere. From artisan breads and pastries to pizzas, lasagnas, and desserts, every item is crafted with care in a 100% gluten-free kitchen.
Beyond baking, Rebel Rise is deeply invested in community impact. Beth also leads Fostering by Heart, a local nonprofit supporting youth who have experienced foster care. Her mission — both in business and in life — is to create spaces where people feel seen, supported, and inspired to rise.
